Pork Roast Stew Recipe

Yesterday I made a pork stew with some leftover pork roast. I sorta copied it from a recipe I found:

onion
carrot
celery
potato
thyme
apple juice
chicken stock
thickener
leftover pork roast

sautee onion, carrot, celery, potato
add thyme
add sliced up leftover pork roast
add juice and stock (I used a cup of each)
then I made a thickener out of Wondra and water and added that cuz it looked sorta watery
the recipe called for quick cooking tapioca so I guess you could use whatever thickener you want
bring to a boil then simmer till done

Colorado Springs Is Classy

Last night we went over to The Broadmoor for drinks (didn’t get any good pics of those but they were yummy- I had a chocolate martini). I heard it was all lit up for Xmas and it was! Really pretty outside and a bunch of Xmas trees, gingerbread houses, etc. inside. They have a nice bar there with a patio and an outdoor fireplace. It was about 20 degrees and there were lots of other people by the fireplace so we just stayed inside by the window and had a pretty view that way. We did go for a short walk out by the lake but it was too cold so we came back inside and hung out in the lobby by the huge indoor fireplace. It’s a really nice place to just hang out. There are several restaurants and bars and they don’t seem to care if you bring your drinks all around the place. Some guy was sitting there with his laptop so they probably even have wi-fi.

Veggie Turkey Soup Recipe

OMG I just made some really good soup.
I rarely, VERY rarely am able to make stuff without a recipe. But tonight I did! I gotta write it down so I don’t forget it.

olive oil
1 onion
1 zucchini
1 carrot
2 celery
1 potato
handful of frozen string beans
handful of frozen spinach
1/2 can cannilini beans
4 cups chicken broth
cooked rice
leftover diced turkey
dried dill
season salt
salt
pepper

Sautee onion in olive oil for a few minutes.
Add carrot, celery, zucchini, potato, string beans, and sautee some more.
Add dill and season salt.
Add chicken broth.
Add spinach.
Bring to boil then reduce to simmer till veggies are tender.
Add rice, beans, and turkey.
Season with salt and pepper.

Turkey Dinner

So I was in LA this year for Thanksgiving so I couldn’t make DM our annual (hee hee) Thanksgiving dinner. So I’m making it tonight. I’m upgrading the chicken to a turkey breast and the stuffing to semi-homemade (still from a bag but from a Whole Foods bag- and adding sausage, celery, and onions). Also I made an apple cake last night that we’ll have for dessert instead of pie.

The rest will remain the same as last year:

Mashed potatoes
Stuffing from a box
Green beans with carmelized onions in vinegar
Cranberry sauce (from Traders)
Gravy
Pumpkin Pie (frozen from Traders-this was surprisingly delicious)

We had a HUGE lunch today- I had a buffalo burger (yum) in Manitou so I dunno how hungry we’ll be in an hour when it’s ready.

Meanwhile we’re listening to cheesy Christmas music (I think DM has had just about enough of this part) and drinking eggnog and rum (after trying several other cocktails that were no good- see photo below) and taking pictures.
