Paradox Lounge

I love Paradox Lounge. It’s awesome. Last night we were meeting friends at Southside Johnny’s– which is actually attatched to Paradox Lounge.  Southside Johnny’s was PACKED. I mean, seriously packed. So we wandered back to Paradox which was not packed at all. We even got a seat on one of their cushy couches. I got a lemon drop (excellent) and dangermike got a jack and coke (well, actually several jack and cokes- and he’s feeling it this morning, hee hee). He also got a cheeseburger and fries. The cheeseburger was outstanding. Really good. And not expensive, either, like they sometimes can be in bars. Plus Johnny himself is always hanging around and he is super nice. Last summer I went thru a phase of not drinking (yea, I dunno what I was thinking either) and he made me a special non alcoholic cocktail, which was really sweet of him.  I think Paradox might be my favorite bar in Colorado Springs. Well, I like Tony’s too and of course The Ritz Grill- but The Ritz is more of a restaurant.  Sorry, no pics, maybe next time!

Spaghetti Soup Recipe

Hey, I’m becoming a regular soup nazi. Tonight I made the third yummy soup without a recipe.

olive oil
half an onion
2 celery stalks
1 carrot
1 can italian diced tomatoes
3 cloves garlic
chicken broth
italian seasonings
1 can canillini beans
1/4 package spaghetti
half a bunch of spinach

Sautee onion, celery, carrot in olive oil then add tomatoes, garlic, italian seasonings.
Add chicken broth, bring to a boil, then lower to simmer and and cook till veggies are tender (like 20 minutes).
Add spaghetti after you break it into 3 sections.
Cook till spaghetti is done (about 20 minutes).
Add beans and spinach and heat thru.

You can add more olive oil to the top and/or parmesean cheese.
