Home Cookin’, East Coast Deli, Downtown Colorado Springs

Apparently tomato sandwiches are pretty popular in some parts of the country but I’d never heard of them. I read about them on The Kitchn and then I made one and it was pretty good. Could use some lettuce, and maybe some cheese, tho….:)

We made chocolate souffle the other night. Yum.

We were out doing errands the other day and got cranky/starving so we stopped in to this place we’ve passed a million times.

The burgers came with onions on them which you know are so NOT my fave. They were easy to take off and left just an onion essence, hehe.

The burgers were really good, but the buns were a little chewy. The fries were delish tho.

The next day we went for a bike ride and a picnic. Last week we went for a bike ride and sat down by a pond on a blanket but there was no food so technically it wasn’t a PICNIC.

But this time we went to East Coast Deli and got some sandwiches. I had egg salad which was really good! DM got turkey on rye. We sat in the park right downtown.

More plant pics. I don’t have any pics today of the tomatoes that I moved out to the sunny junk yard but they already have flowers! I should have moved them WAY earlier in the season. Doh.

The other night I made homemade fried chicken, and baked sweet potato fries.

Then yesterday confetti corn from The Barefoot Contessa, with slight modifications

For breakfast we had figs with chevre and honey. I bought the figs for something else and didn’t use them so I found this recipe online and it was really good.
