I think I’ve mentione that it is really hard to cook beans up here at 6200 feet. So the other day I thought I’d go ahead and try to do them in the slow cooker. I had finished some in the slow cooker awhile back but I hadn’t done them from the start in it before.

So I took:
A cup of dried black beans, rinsed but not soaked.
A small onion, chopped.
A couple of cloves of garlic, minced.
Half of an orange bell pepper, chopped.
A couple of tomatoes, chopped.
Half a jalapeno, chopped.
Half an orange, chopped (random leftover item so why not).
Some cilantro.
A tsp of cumin.
A TBSP of chili powder.
Covered the whole thing with water and put it on high.
It took a few hours, but not overnight or anything.
I served them with some rice from Martha Stewart

Then a couple days later I made a rice and bean bowl with veggies, chips, plain yogurt, avocado, cheese, and salsa, which was super tasty!

Then another day I made veggie black bean tacos.
Cooked up some random veggies- zucchini, peppers, corn, onions, garlic- in a skillet.

And added them with the beans, cheese, avocado, sour cream, lettuce, etc. to make delicious tacos.

This recipe made a ton of beans, I still had some left over after all those meals.
