Well, that didn’t really work. We went out to eat a couple times, I didn’t use all the frozen chicken tenderloins, and yet, somehow I still went back to the grocery store yesterday and spent $70 more.
I need to come up with a better plan and a more specific budget and try again.
Meanwhile I DID make some chicken items!
The second day we had a similar meal as the first.

I like stuff all mixed together so here’s what mine looked like.

The next day was chicken salad with roasted broccoli, avocado, celery, carrots, and blue cheese dressing. I mixed my blue cheese dressing with some plain yogurt to cut the calories a little.

Then the day after that I made a chicken pasta with zucchini and parmesean. It was really good. I adapted it from this recipe from Sunset Magazine.

- Then today I made some vegetable minestrone soup and just plain chicken tenderloins sauteed in butter. Yum.
- Once I get this thing figured out, I’ll post some more about it!
