So, remember when I was talking about our new eating plan? It includes a big salad every day. I just do not get tired of salads! I read a thing about salads that said a good salad should have a lettuce, a fruit, a cheese, a nut, and a “wild card”. I don’t do that everyday, but I come close and am able to make a variety of salads using a lot of the same ingredients over and over.
I usually buy arugula because it’s my favorite, but I also love butter lettuce. Usually I get green leaf or red leaf because it’s almost always on sale, and now and then I will get a bagged mix. I keep lots of fruit on hand like apples, oranges, pears, and dried cranberries. As for the cheese, I usually use parmesan, but sometimes feta, chevre, or blue cheese. Finally I almost always add walnuts. And I have lots of different vinegars: balsamic, white balsamic, white balsamic with fig, and red wine. I make the dressing just by swirling some vinegar and some olive oil over the salad and then tossing. Sometimes it needs a sprinkle or two of sea salt, pepper, or herbed sea salt on top.
